The month of Syawal is almost here… By now, most housewives have already started the preparations to bake ‘Raya Cookies’ to serve your loved ones and guests... I am no exception in preparing my list of ‘Raya Cookies’ for this festive month.
In the old days, when we used to 'open house,’ there would be a rush to order festive cookies and stock up on tidbits. A practice known as "open house" (Rumah Terbuka) is common during the festivities, especially during Hari Raya Aidilfitri, Deepavali, Chinese New Year, and Christmas. Open house means that all well-wishers are received and that everyone, regardless of background, is invited to attend.
Kuih Bahulu, kuih Kapit, Semperit cookies, pineapple tarts, kuih Makmur and many more were annual favourites.

1. PINEAPPLE TART
Pineapple tarts are cookies made with pineapple jam on a soft and buttery crust. There are a few variants, some are “open” like the one shown in this pineapple tart recipe while others have the pineapple jam fully enclosed in the crust and there is also the Indonesian style “Nastar” where the jam is only half enclosed in the pastry, with the sides of the tarts left exposed so that you can see the filling.

Today I will bring you some pudding, pannacotta, trifle & parfaits as part of the introduction to types of ‘Cold/Frozen desserts’. It involves an incredibly short list of ingredients (all of which you probably have in your pantry right now) and a super simple preparation. 5. HEAVENLY HOMEMADE WHITE CAKE

The shortbread recipe is one I wrote down in my recipe book some time ago with my late Granny Aishah, and it originally came from a package of Land o’ Lakes butter. Once the dough is made, it should be chilled for a little while because it will be easier to handle and shape the balls of dough. Each dough ball is pressed down with a finger (creating a fingerprint that ends up looking a little bit like a nest for the eggs) and the slightly chilled dough will also hold the shape of the fingerprint much better than unchilled dough once it gets into the oven.

Very appropriate.

5 Tips for a Perfect Pavlova:
a. Make sure your mixing bowl is squeaky clean.
b. Use older eggs and separate them carefully to ensure absolute no yolk mixes with the whites.
c. Separate eggs while cold but let them sit to come to room temperature before whipping. d. Cold eggs separate more easily, and room temperature whites will whip up better.
e. Use a deep, narrow bowl to ensure that the beater is well into the egg whites, to whip them up most efficiently.
f. Whip until your sugar is fully dissolved your sugar. Using superfine sugar helps. If you only have regular sugar, you can run it through a food processor before using, to make finer grains.

12) SHC's BEST OF 20 HOLIDAY DESSERT SPECIAL EDITION 2017
To those who celebrated Christmas, I hope you had an incredibly fabulous Christmas holiday with loved ones this week. I am sure that all of you are still in the “Holiday” mood, and so am I! But the past few days I was a little bit under the weather, so forgive me darlings for not updating anything on my blog. But today I am feeling much better and off I went to the kitchen to bake! Yayy! Plus, it’s still school holiday for Hannah (my lil princess), so it’s mummy & daughter baking and bonding time in the kitchen!


As we are now approaching the end of 2017, Hannah insisted that I did a list of recipes that I love to bake during the holidays for our family. To be honest, there’s a lot for me to list it down (yesss! We love all that sugary goodness!) so we both decided to list the ones that have become “MY Family's favourite MUST bake dessert” during holiday and tradition for generations in our family. And here it is, I hope that all of you will love and bake it for your family too! Have fun with your loved ones during this holiday, as all of us embarked on a whole new year!

1. PISANG GORENG CHEESE/BANANA FRITTERS WITH CHEESE

Banana fritters with Cheese or famously known to us Asians “Pisang Goreng Cheese” is said to be a popular dessert in neighbouring Indonesia. It is sold in the streets and is very popular among locals as well as tourists.  Some also say that this recipe comes from Sabah, Malaysia. No matter where it comes from, it has become a favourite of to all of us in Malaysia.

2. RED VELVET MARBLE BUNDT CAKE
I love the look of this red and white bundt cake for the holidays or Valentine’s Day, but red velvet fans will request this cake all year round. This Red Velvet Marble Bundt Cake is easy to assemble because it’s made with one vanilla cake batter; some is set aside and coloured with food colouring and cocoa powder. The two batters are then layered in a bundt pan for a beautifully swirled look. The trick to creating looping swirls is to gently layer the batter around the Bundt pan with a small cookie scoop. No need to swirl with a knife; it will marble as it bakes.

7A. RASPBERRY ROSE CAKE
This cake is stunning and delicious!  The white cake has a light and tender crumb that is perfectly sweet.  In between the layers is some amazing bright red homemade raspberry jam. Raspberry Rose Cake is made up of two tender white cakes with sweet raspberry jam sandwiched between and then covered in rose-like swirls of silky smooth raspberry cream cheese frosting. It’s the perfect cake for Valentine’s Day, a bridal shower, a baby shower… or anytime you need a YUMMY PINK CAKE!

7B. HOMEMADE RASPBERRY FREEZER JAM
Always have delicious homemade jam on hand with this simple Raspberry Freezer Jam recipe. No special canning equipment needed! Some things you must know about freezer jam:
1. To get the best flavour, use ripe and flavourful fruit.
2. Heat the fruit only until the sugar dissolves.
3. It is thinner than canned/shelf stable jam. It’s more spreadable!
4. It’s full of sugar. That’s just how this jam is and it’s delicious. No, it’s not “healthy”. If you need a low sugar jam, search for a low sugar recipe.
5. Store in glass or plastic jars/containers in the fridge and freezer.
6. Lasts for 3 weeks in the fridge and 6 months in the freezer.

8. CHOCOLATE CHIP GOOEY BUTTER CAKE
This is totally amazing. It's incredibly easy to make and oh so decadent. I took this to a party and this was the one dish that everyone kept coming back to for more!

9. STEAMED BANANA MINI CUPCAKES/KEK PISANG KUKUS
This mini cuppies are my dad’s favourite. It’s a cake but my dad preferred it to be steamed/bake into a mini cupcake. According to him, it’s easier to just pop-in one after another when eating it! Once you start to eat these lil cuties, you can’t stop. It is so soft and creamy sweet from the natural taste of the banana.

10. EASY HOMEMADE CHURROS WITH CHOCOLATE SAUCE
This is Hannah’s favourite dessert. She can eat it every day! I am sure your kids would love it too. These fabulously crunchy & delicious Churros are one of the easiest desserts that can be made at home! Dunk them in a rich hot chocolate – or dulce de leche – sauce for a decadent dessert to die for!

11. SWEET CUSTARD DOUGHNUTS
Oozing with custard sauce, these easy-to-make doughnuts give classic sweet twist that will be loved by young and old. Share the love with these little custard-filled doughnuts.

12. EASY TASTY MINI SUGARED DOUGHNUTS
These tender tasty doughnut bites are easy to make. They're perfect for brunch, or as an after-school or anytime snack.

13. KUIH NONA MANIS
This traditional ‘Kuih’ (translated as ‘cake’ in English) is one of my personal favourites! It’s creamy, not too sweet and soft. And it uses the famous ‘pandan leaf’ as a flavouring and natural colour. Try it you won’t regret! My family simply love to have this kuih during our tea time on weekends.

14. BEST HOMEMADE BUTTERSCOTCH PUDDING
A butterscotch pudding that I would drink if I could. I’m honestly not sure if this should be called butterscotch pudding or salted caramel pudding because, basically, this tastes like thick, creamy, cold salted caramel sauce. In other words, this pudding is worth every ounce of effort put forth and every extra calorie consumed. A fabulous butterscotch pudding that tastes like a cross between salted caramel and a Werther’s candy!

15. EASY HOMEMADE CHOCOLATE POKE CAKE
Poke cakes are so fun to make. There is something satisfying about poking holes in a cake and then flooding it with a luscious filling! Trust me, you can never get enough of this chocolaty heaven!

16. MOIST HOMEMADE CHOCOLATE CUPCAKES
These Moist Chocolate Cupcakes are completely homemade and full of chocolate flavour! The cupcake melts in your mouth and the frosting is made with real melted chocolate for a silky smooth, super chocolatey frosting you won’t want to stop eating!

17. PRINCESS DIANA'S FAV BREAD & BUTTER PUDDING

19. ONDE-ONDE BUAH MELAKA (PANDAN FLAVOURED GLUTINOUS RICE BALLS WITH PALM SUGAR)
This dessert uses screwpine (pandan) leaves, palm sugar and is coated with shredded coconut. There are many varieties of delicious kuih in Malaysia. One that remains my favourite is onde-onde. I have loved it since my childhood days.
Made from a combination of two types of flour, it has a chewy texture. As you bite into an Onde-Onde, the melted palm sugar flows out. I likened them too sweet little bombs as the sweetness explodes in the mouth. The shredded coconut further enhances the deliciousness of this 'kuih'.

20. BUBUR PULUT HITAM (SWEET BLACK GLUTINOUS RICE PORRIDGE)
Nyonya and Peranakan are known to have sweet tooth; their penchant for everything sweet is most pronounced in their skills in making very delicate, sinfully sweet, and utterly delightful Nyonya kuih—local sweet cakes that are eaten throughout the day—and many decadent desserts. Since my ancestors (on my Granny Aishah’s side) came from the ‘Baba & Nyonya’ race, I have always loved this porridge!
This sweet porridge is known as ‘Bee Koh Moy’ in the Hokkien dialect by the Nyonyas as told by my late Granny Aishah. In Malay language, it’s called ‘Bubur Pulut Hitam’.
Bee Koh Moy is made of black glutinous rice (black sticky rice), water, sugar, and topped with slightly salted coconut milk when served. The composition of bee Koh Moy might be strange but it’s a Nyonya dessert that I adore. I love the mouthfeel and texture of boiled black sticky rice. The slightly salty coconut milk simply completes the flavour by lending a nuance and subtle creamy note.
